This recipe is a perfect balanced meal, packed with flavour, vitamins and nutrients. This dish will satisfy your palette and leave you feeling full and refreshed. It also makes a fabulous side dish for any meal. The recipe is so simple to make and you can whip it together in a flash! 

These beautiful fresh ingredients are what you need: sweet potato, coconut oil, sea salt and cracked black pepper. Avocados, limes and coriander.

Glamor Hippie Sweet Potato Fries

Preheat the oven to 225C (fan forced). Line a large baking tray with parchment paper.

Cut the sweet potatoes into sticks, about 1cm to 1.5cm wide.

Place sweet potato into a large mixing bowl, pour over melted coconut oil season with salt and pepper, toss to combine.

Transfer the sweet potatoes onto the prepared baking sheet ensuring they are evenly spread and not stacked on top of each other.

Bake for 35-40 mins turning every 10 minutes to prevent burning.

In the meantime, prepare the avocado dip:

In a food processor, mix the ripe avocado, fresh lime juice, coriander and salt and pepper. Mix until it becomes a smooth texture.
