  1. 1kg organic roma tomatoes, halved
  2. 2 tablespoons organic olive oil
  3. 1tsp dried thyme
  4. 1 medium organic brown onion, roughly chopped
  5. 2 organic garlic cloves, crushed
  6. 300g organic potatoes, peeled and chopped into 1cm cubes
  7. 2 tablespoons organic tomato paste
  8. 3 cups organic chicken stock
  1. Preheat oven to 220C/200C fan-forced. Place tomato on a lined baking tray. Drizzle tomato with half the olive oil and sprinkle the dried thyme over the tomatoes. Roast for 20 minutes until tender and soft.
  2. Heat oil in a saucepan. Add onion, garlic and potato. Cook, stirring occasionally, for 5 minutes. Add tomato paste and stock, stir well to combine. Bring to the boil. Reduce heat and simmer for 20 minutes, until potato is just tender.
  3. Add roasted tomatoes to the stock mixture and blend the mixture until smooth and creamy. Season as required. Serve.
