BERRY BUTTERMILK MUFFINS

Ingredients
  1. 2 ½ cups organic self-raising flour
  2. ¾ cup caster sugar
  3. 1 tsp cinnamon
  4. 1 egg
  5. 2/3 cup olive oil
  6. ¾ cup buttermilk
  7. 200g frozen mixed berries
Instructions
  1. Preheat oven to 200°C (Fan Forced).
  2. Line a 12-hole (1/3 cup capacity) muffin pan with paper cases.
  3. Sift the flour, sugar and cinnamon into a large bowl. In a separate bowl mix the egg, olive oil and buttermilk until well combined. Add the wet mix and frozen berries to the dry ingredients. Stir until just combined.
  4. Spoon the mixture into the prepared pan.
  5. Bake for 20 minutes or until lightly brown and spring back when touched.
  6. Turn muffins onto a wire rack to cool.
  7. Enjoy!
